Cooler temps blew in quick yesterday, so FALL has FINALLY arrived in Texas! I was craving something warm, healthy and hearty for dinner, so I checked the pantry and I had everything to make this EASY Chicken Taco Soup…it’s SUPER simple to do, too!

Now, keep in mind, I cook like I hoop…I just play around with things and get creative! So, you can do the same here…reduce the ingredients by half, use low sodium stuff, or not…use lean ground turkey or beef or some chopped up steak instead of chicken! I didn’t add brown rice, but I have in the past…just another idea. You’ll notice I mention that I left out the corn in the video, but you might choose to add it. As for spices, that’s where I really just throw things in…what I have used here is just a sampling of what you can start with…the things you can add are only limited by your own preferences and what you have on hand!

I also tend to keep all these ingredients on hand as staples in my pantry/freezer…especially a variety of beans, canned tomatoes and an assortment of bone broths or other stocks, plus chopped celery, peppers & onions. Also, if you have any of these foods in the fridge as leftovers, that works well as an even more budget-friendly start for this soup! My favorite thing about cooking like this is that it’s very flexible and you can adjust the ingredients to fir your own personal taste…you can even eat it without the tortillas, to lower the carbs, sub for rice with cauliflower, and it would be just as yummy!
 

EASY Chicken Taco Soup

  • Diced Chicken
  • Garlic
  • Chopped Celery
  • Chopped Bell Pepper
  • Chopped Onion
  • Spices – Chili Powder, Cumin, Pepper (feel free to add others, to your own taste)
  • Salsa – whatever you have and however much you prefer
  • Canned Diced Tomatoes
  • Chicken Stock or Bone Broth (this is best, but you can sub 1 can of water for every can of food you use, then add more to taste)
  • Canned Beans – pinto, red, white…drained & rinsed / add last 5-10 minutes of cooking
  • OPTIONAL – Canned Corn or other veggies you prefer /add last 5-10 minutes of cooking
  • OPTIONAL – rice (white or brown) / add last 5-10 minutes of cooking
  • Taco Toppings – cheese, sour cream/greek yogurt, avocado/guacamole
  • Tortilla Chips or Strips – bake your own from corn tortillas or just use pre-made

As you can see , you can add your own twist to all of this…using other spices, a can of corn, some rice, other veggies and certainly, your favorite taco toppings! Another great thing about this soup is that it’s protein-packed while still being flavorful and fun on any night…or even on a Taco Tuesday!
