This recipe is one I found on Pinterest, several versions, actually…but I put a healthier twist on it! I prefer an Easy Lasagna Soup that’s lower in fat and sodium, a great alternative if you are trying to cut those things down in your diet, like me. Here’s what I used and how I did it…
Ingredients:
- 1 pound of lean ground turkey
- 1/2 onion, diced – I used DRIED diced onion
- 1 whole red bell pepper, diced – I use used frozen I had on hand
- 1 14.5 oz petite diced tomatoes
- 1 28 oz can of crushed tomatoes
- 1 teaspoon of minced garlic – I forgot to use, tasted fine!
- 1 tablespoon of Italian Seasoning
- 4 cups of unsalted or low-sodium beef broth (1 carton)
- 12 oz of lasagna noodles
- 15 oz of low fat ricotta cheese (You won’t need it all)
- 1 cup of mozzarella cheese – can use Italian blend or low fat
- 1 cup of parmesan cheese – can use Italian blend or low fat
- fresh basil (optional) – I used dried I had on hand
Steps:
- Cook the onion, red bell pepper, garlic and some of the seasonings in a large skillet.
- Brown the ground turkey in the same pan with the onion and bell pepper.
- Place this cooked turkey and veggie mixture in a 6 quart crock pot.
- Pour in the crushed tomatoes and the diced tomatoes.
- Add the rest of the seasonings.
- Pour in the beef broth.
- Cover and cook on low for 5-6 hours.
- Remove the lid. Break the lasagna into bite size pieces and stir in.
- Cover and cook on high for about 30 minutes until the noodles are soft.
- Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and parmesan cheese. If your like, sprinkle with fresh basil.
